Snow on the Mountain recipe

We enjoyed a fun progressive dinner with school friends over a week ago and a few pals requested this recipe from Mom’s files.  I’ll share it here in case anyone else would like to try it.  The “snow” on the mountain of rice and toppings is supposed to be the coconut, but if you toast it, it no longer looks like snow.  Still a catchy recipe name!

Snow on the Mountain

4 oz. sliced mushrooms

½ c. chopped green pepper

½ c. chopped onion

½ c. butter (or less)

½ c. flour

1 t. salt

¼ t. pepper

2 c. chicken broth

2 c. half and half

2 c. chicken breast, cooked and cubed or shredded

½ c. chopped pimiento (you can’t get this here in CR, but it is in the original recipe)

Sauté the mushrooms, onion, and pepper in the butter, then blend with the flour, salt, and pepper.  Add chicken broth, ½ and ½, chicken, and pimientos, and bring to a boil briefly. Serves 6 to 8.

Serve on a bed of rice and offer the following toppings:

celery

tomatoes

green onion

chow mein noodles

grated cheese

pineapple

toasted almonds

toasted coconut

mango
